I am trying to perfect my own anzac biscuits! So far, one burnt batch has ended up in the bin, one was way too soggy and two have come out just right! Perhaps contrary to popular oppinion, Anzac biscuits are not that easy to bake! Getting the consistency right is the tough part. Too crumbly and the biscuits lack that essential 'crunch' as you bite into them; too sloppy and it turns into Anzac Slice! The perfect Anzac, in my humble oppinion, is hard, crunchy and full of flavour. Oh, and enormous! I LOVE a huge Anzac. This way you can treat yourself to ONE very special treat at the end of a long day, with a nice hot cup of tea. One more thing: only 10 minutes in the oven! Turn your back on them, and disaster will strike! Stay tuned for the recipe. Coming soon! Anna
