All things bright & beautiful


This week I met someone who I would love to share a long cup of tea with.
We seem to have a lot in common.

As well as juggling a large family, homeschooling and  lamenting the summer heat, we also share a passion for creating gorgeous cakes!!

Rose's Messy ruffle cake was the inspiration for this bright show stopper!
It is quite a simple technique which requires a Wilton 104 petal tip. The ruffles are fun to do, once you get the hang of them, and they remind me a lot of stippling a quilt!! 
The results are stunning and the scope for possible colour schemes excite me!!
 I love how my cake turned out and am keen to try my hand at a two tiered version.
 As my own family is sick of cake, I might just need someone to throw a party!!



Inside this vibrant monstrosity is an unlikely Caramel cake with caramel cream cheese frosting.
There is  also a layer of meringue through the middle, which gives the cake amazing texture and sweetness.

I had an interesting time making the caramel.

It only took five attempts, where I wasted 14 cups of sugar before finally ditching the water idea and heated the sugar on a dry pan.
I  burnt it once and  got it right eventually. Sigh.

  

Anyway.......

I think this cake was a winner.
 Perhaps I have discovered both a new decorating technique and made a new friend along the way.
How good is that!!?
