Lemon coconut cake



My husband turned 50 this month. 

Fifty!! Wow!!

I know in the scheme of things  it's not old, but is it just me, or does fifty sound old!?
He was 27 when we met. I chuckle to remember that I thought he was getting up there because he was almost 28!!  I  on the other hand, was a  young spring chicken who had just turned 21.

As he did then, my husband captures my heart. 





He is not a cake person, or a dessert person (!) I struggle to comprehend it, but he isn't even that fussed on chocolate ( I know!)
So really, this cake was about me. I had been planning it for weeks. 

My husband loves coconuts.

 He actually REALLY loves climbing the trees to get them himself.

He also loves lemons.

So, I knew he would like a lemon coconut cake. Well, a taste of it anyway. 
This recipe uses real coconut water which gives the cake an authentic tropical flavour. 
I especially love the meringue frosting. It's soft, glossy texture and pure white appearance makes a refreshing change from buttercream frosting.  I am experimenting with coconut cupcakes at the moment, using the same coconut  sugar syrup. 

Loving the potential.















Daddy Bear also shares his birthday with one of our daughters. 
 (I was very clever to double up on two birthdays!!)
