Apricot and Pecan Muffins




I made these delicious muffins today. I was so happy with how they turned out. A new combination, apricot and pecan....yum! Try them out and let me know what you think.

APRICOT & PECAN MUFFINS

*Chop  about  half a cup of dried apricots into small pieces. Place in saucepan and  cover with apricot nectar or orange juice. Simmer for a few minutes until soft. Set aside.

WET MIX

* 1 egg
* 1/4 cup canola oil
* 1 cup low fat milk
* 1/2 teaspoon of vanilla essence
* Softened apricot mixture

DRY MIX

*2 cups wholemeal flour
*1/2 cup castor sugar
* 1 teaspoon bi carb soda
* 3/4 cup chopped pecan nuts.

METHOD

 Use two bowls. One for wet mix and one for dry mix.

1. Lightly beat egg,  add oil, milk, vanilla and apricot mixture. (wet mix)

2. Mix dry ingredients in separate bowl.

3. Carefully pour wet mix into dry mix and gently fold until just combined. I always use a fork for this step.

4. Gently spoon mixture into prepared muffin tray. ( my mix usually makes 9 muffins )

5. Place  half a pecan  nut on each muffin.

6. Bake at 180 for 15-20 minutes.
 Leave in tin on oven rack for 5 minutes before carefully taking out. 

Serve warm with a hot cup of tea..ENJOY!!
