A delicious yet simple and easy cupcake recipe, perfect for a beginner cook!
Ingredients:
2 cups plain flour
1 tsp Bi-Carb Soda
180g Butter, softened
1 tsp vanilla extract
1 cup caster sugar
4 eggs
4 Tbsps milk
Method:
1)Preheat oven to 180 oC. Line a muffin tray with cupcake cases.
2) Sift flour into small bowl, add bi-carb, butter, extract, sugar, eggs and milk; beat with electric mixer on low speed until ingredients are combined. Increase speed to medium; beat until mixture is changed to a paler colour.
3) Drop approx. 1/4 cup of mixture into each cupcake case. Bake about 20 minutes. Cool.
(Optional) Ice with lemon icing and top with half a strawberry.
