Method: 1)Preheat oven to 180 oC. Line a muffin tray with cupcake cases. 2) Sift flour into small bowl, add bi-carb, butter, extract, sugar, eggs and milk; beat with electric mixer on low speed until ingredients are combined. Increase speed to medium; beat until mixture is changed to a paler colour. 3) Drop approx. 1/4 cup of mixture into each cupcake case. Bake about 20 minutes. Cool.
(Optional) Ice with lemon icing and top with half a strawberry.
They look delicious Anna and very do-able for every cook. I have just shown this to Miss O who is 9 and loves to bake. She was wondering where you found your pretty cup cake cases.
