Healthy Breakfast muffins - Banana & Maple


Ingredients

WET MIX:
* 1 egg - lightly beaten
* 1/3 cup oil - canola, rice bran or vegetable
* 1 cup skim (or full cream/soy) milk
* 1/4 cup maple syrup
* 3 overripe bananas, mashed well


DRY MIX:
* 2 cups plain flour (either 1 white, 1 wholemeal or 2 cups freshly ground wheat grain)
* 1 teaspoon bi-carb soda
* 2 Tablespoons desiccated coconut

METHOD:

* Lightly spray muffin tray. Turn oven on to 180oC.

*Whisk egg. Add oil, banana, milk and maple syrup. (Wet mix)

* In a separate bowl, sift flour. Add sugar, bi-carb and coconut. Mix well. (Dry mix)

* Combine wet and dry mixes gently.

* Mix very carefully with a fork, until only just combined.

*Spoon evenly into 9 muffin sections, bake for 15-20 minutes.

*Once cooked, leave in tin for 5 minutes, then cool on rack.

*Enjoy warm with butter or just as they are!
